Cognac XO Silver 25 years
Crus de Grande Champagne.
25 to 30-year old Cognac, aged exclusively in oak barrels, and blended more than 30 months before botteling.
• Hennessy-type distillation.
• 40° proof.
• Natural reduction with light filtration at ambient temperature (Risk of small crystals in intense cold, but these will disappear at normal temperatures)
• Definite emergence of rancio, a significant note of ageing in a brandy, with notes of old leather and vanilla, and lighter notes of lime, vine flowers and spices.
• Length which persists well after tasting, with a pronounced softening in the mouth and re-emergence of honey in the finish. A smooth cognac with blended spice.
Cognac XO Gold 50 years
50 years old or more, with the oldest dating from 1922, aged exclusively in oak barrels and blended more than 48 months previously to botteling.
• Hennessy-type distillation.
• 42° proof.
• Natural reduction with light filtration at ambient temperature.
A long, powerful aroma, full of rancio, then spicy notes of cinnamon, ginger and vanilla. Delicate woody nuances, cigar-boxes and undergrowth.
The palate detects finesse first of all, and smoothness bestowed by the presence of a group of Grande Champagne brandies, very present in the mouth. Then the taste buds recognise the vanilla character from the Limousine oak barrels, then spicy flavours of cinnamon, ginger and cloves return, along with the elusive sweetness of fruit.

Armagnac XO 25 years
Dark amber brandy with coppery green lights, brilliant and clear.
Perfumed flowers predominate, then with aeration, notes of roasted coffee emerge, along with fresh plums and chamomile.
The attack on the mouth is bold, with a light note of violets developing, bringing nobility and panache to the brandy. Tannins are not marked, but well-blended. The finish is very fresh and pleasant. Some ageing is still necessary for this brandy to settle.
Match with: rich, invigorating coffee like Arabica from Cuba.
